Rich and delicate, the firm flesh of gurnard holds together well when cooking. It can be grilled or fried, but due to its low oil content the flesh can dry out so use a lower heat and either coat in some oil or cook using a wet method such as braising. Gurnard's firm texture means it freezes well and freeze as soon as it is caught.
